This is an easy cheesy cauliflower rice recipe to enjoy for your dinner. The flavourful cheese used in and on the cauliflower rice makes it irresistible. You can enjoy this recipe if you aren't in a keto diet too.
For a full meal, you can always eat it with chicken fajita. The spices I added (Ground turmeric and Dry basil) gave the cauliflower rice an even more delicious taste. Moreover, if you're a fan of spicy things, you can add chilly powder.

- Butter
- Cheddar cheese
- Egg
- Onion
- Salt
- Ground pepper
- Dry basil
- Ground turmeric

How to make easy cheesy cauliflower rice?
Firstly, cut the cauliflowers to small florets then beat in the food processor. Now you have your cauliflower rice. Dice onion and mix it with the cauliflower rice in a big bowl.
Add the melted butter, salt, ground paper and all other spices then mix everything.
Add the eggs and the shredded cheese, then continue mixing until combine.
After that, Spread the previous mixture in a baking tray and press firmly on the mixture.
Sprinkle extra cheese on top of the mixture.
Put it in the oven for 30 minutes on 210 C.
Take it out of the oven when it's colour becomes golden or when it is fully cooked then serve it.
How to serve this cheesy cauliflower rice:
You can serve it as a stand-alone recipe with some chopped parsley on the top. Also, you can serve it with Spicy Prawns With Tomato Sauce or Cheesy Chicken Fajita Recipe.
Storage
To store: Store leftovers in the fridge for 2-3 days.
Freezing: This dish can be frozen for 1-2 months, no problem.
To reheat: Allow it to defrost to room temperature, then reheat in the oven or in the microwave.
