- Coconut flour
- Eggs: Use eggs at room temperature.
- Coconut milk: You may use almond milk, oat milk or any non-dairy milk instead.
- Coconut oil: You can replace it with melted butter.
- Swerve: To add a sweet taste.
- Baking powder: To make the pancakes fluffy.
- Pinch of salt
- Vanilla extract: To add flavour.

How To Make Coconut Flour Keto Pancakes
One: Whisk eggs until fluffy, then add milk, swerve and melted coconut oil keep whisking until combined. In a separate bowl, whisk the dry ingredients of coconut flour, salt and baking powder until well blended (photo 1).
Two: Add wet ingredients to dry ingredients; combine well with a whisk until you have a smooth batter (photo 2).
Three: Heat a large pan over medium heat. Grease it with butter.
Four: Drop ¼ cup per pancake of the pancake batter onto the hot pan (photo 3).
Five: Cook on medium heat until small bubbles form on top, then flip. Cook the other side until golden brown. Serve warm with your favourite pancake toppings.

- When whisking the dry ingredients and the wet ingredients, make sure that no lumps remain.
- When cooking the pancake, don’t flip it until you see small bubbles form on top of it, or it will crumble.
- I used a heart mold to give a good shape to the pancake which is totally optional.
- It’s important to make smaller pancakes (¼-cup amount), so you can flip them quickly and easily.
- Also, keep a close eye on the pancakes as they cook because they can burn quickly.
- Melt the coconut oil until it becomes a liquid (over low heat). And let it cool for two minutes, then add it to the wet ingredients.
