Why using both butter and olive oil?

I use olive oil with butter not only for a good flavour but also for not making the butter burn while cooking the mushrooms.

Which mushroom size should I use?

Actually, it doesn’t matter which size you use. I prefer to use a medium to small size in this recipe. If you use bigger size mushrooms, you may need to slice it; to cook well and to mix nicely with the garlic and spices.
