This Mediterranean grilled chicken salad is the perfect chicken salad for lunch or light dinner. It is loaded with fresh veggies: cucumber, lettuce, tomatoes, onions, along with avocados. Everything is topped with a delicious, flavourful dressing.

I am a huge fan of this chicken salad recipe because it’s colourful, flavourful, and makes for a complete meal in one bowl. Also, this salad is can be easily customizable with your favourite ingredients.

Grilled Chicken Salad ingredients
Chicken:
Chicken breasts, boneless and skinless
Garlic, minced
Paprika
Salt
Ground black pepper
Salad:
Cucumber
Avocado, sliced
Black olives
Lettuce leaves
Red onion, sliced
Tomatoes, diced
Sweetcorn
Dressing:
Dried basil
Dried oregano
Cider vinegar
Olive oil
Lemon juice
Salt
Cumin
Ground black pepper

How to make this Chicken Salad?

Grilling the chicken: In a mixing bowl, add chicken breasts, minced garlic, paprika, salt, and pepper. On medium heat, grill the chicken breasts until the chicken fully cooked (about 5-6 minutes on each side). Then let the chicken rest for 5 minutes before slicing them.
Making the dressing: Whisk all the dressing ingredients in a jug.
Building the salad dish: In the serving plate, add all the salad ingredients, then top it with the chicken sliced. Next, pour the dressing all over the salad and chicken.
It’s ready to serve.

Top Tips:
If you are not a fan of chicken, you can replace it with salmon or shrimp.
If you are going to make this salad ahead of time, don't add the dressing, keep it ready in the fridge to add before serving.
Chop the veggies into medium-sized pieces, not too big or too small.
Leftovers can be kept in the fridge for two days.
What else can I add to this chicken salad?
You can add, spinach, kale, bell peppers, green olives, or feta cheese. You can even add some fruits, like apple or blueberries, or even nuts. Be creative!
