- Chicken breasts: Use boneless skinless chicken breasts.

- Green olive
- Cherry tomatoes: Or use chopped tomatoes.

How To Make Oven Baked Stuffed Chicken Breast With Spinach & Mozzarella
Preheat the oven to 180C/356F and grease a baking dish with vegetable oil or olive oil.
Step one - Prepare The Chicken
Wash the chicken and then pat dry with a paper towels.
Use a sharp knife to slightly cut the chicken breast in half, so you have enough space for the filling but not wholly separating the two halves.
Step Tow - Mix The Spices
Prepare a small bowl with the spices mixed inside, and spread it all over the chicken, not forgetting between the cut (photo 1).
Step Three - Prepare The Filling
Wash the spinach and make sure to drain it very well so that the chicken does not become overly wet.
Cut the tomatoes and the Green olive in halves.
Evenly distribute the filling inside the chicken, make sure it is full but not overflowing (photo 3).
Step Four - Oven Bake
Neatly place the stuffed chicken breasts in a single layer in the prepared baking dish. Cover the dish with aluminum foil and Bake in the preheated oven for about 30-40 minutes (cooking time differs depending on the thickness of the chicken).
Uncover the baking dish and spread the cheddar cheese on top of the chicken breast and put it back in the oven for 5-10 minutes more until the cheese melts.
