You are probably not going to find this keto zucchini sushi in a Japanese sushi bar. But this zucchini sushi is delicious and an alternative to regular sushi, which is stuffed with rice.

Minced beef
Zucchini

Cheddar cheese
Keto tomato sauce
Spices:
Dry basil
Garlic powder
Chilli powder
Cinnamon
Ginger powder

How to make keto zucchini sushi recipe
- In a small pot, place the minced beef, onion and some water on medium fire.
- Leave it for 10 minutes, then add all spices and keep cooking the beef until it is fully cooked.
- After that, add the tomato sauce to the cooked beef and remove it from the stove.
- Slice the zucchini in half crosswise.
- Then, Using a knife discard the zucchini centre carefully.
- After that, boil the zucchini for 5 minutes, to make it a little soft.
- Then, in an oven tray, place the zucchini rings.
- Then, fill the rings with the first layer of the cheddar cheese, press the cheese inside the ring down, leaving the top unfilled.
- After that, add the second layer, which will be the cooked beef.
- Finally, add cheddar cheese on the top of each zucchini ring.
- Then, bake for 30 minutes on 230 C.
- Garnish with parsley, then serve.
Tips for better keto zucchini sushi recipe
- Don't over boil the zucchini, it will be mashed.
