Lazy Cakeย is a super easy, no-bakeย chocolate biscuit cakeย made withย 4 ingredients: I just mixed biscuit, chocolate, heavy cream and butter and chilled until firm. No oven was used, and it is kid-friendly!

What is Lazy Cake?
I don't know why it is called that name, but I think it is because it is so easy to make, or it doesn't need any baking or maybe because it doesn't need many ingredients.
Anyway, this Chocolate Biscuit Cake, which is also called chocolate fridge cake, is fudgy, rich, crunchy, and chocolaty. It took me less than ten minutes to put it together, but I had to wait until it cooled down in the fridge to enjoy it with a cup of tea.

- Tea biscuits: I used digestive biscuits.
- Heavy cream
- Butter: I prefer unsalted butter.
- Semi-sweet chocolate chips: I prefer using semi-sweet chocolate.
- Toppings (optional): I used powdered sugar, raspberries, and blueberries.
How To Make Lazy Cake?
Prepare the Biscuit: Put the biscuits in a large zipped bag. Use a rolling pin to smash the biscuits into small pieces then transfer into a bowl.
Make the chocolate sauce: In a saucepan, heat heavy cream and butter until the butter melts. Then turn off the heat and put the chocolate chips in the hot mixture, whisk until melts.
Make the Cake: Pour the chocolate mixture over the biscuits, mix well until all the biscuits are coated with chocolate.
Refrigerate the cake: Transfer the mixture into a 20cm springform (lined with parchment paper) then refrigerate for 1-2 hours.
Add the toppings and serve: Next, take the cake out of the springform, sprinkle powdered sugar on the top then serve it with blueberries and raspberries.
Expert tips
- Using semi-sweet chocolate makes it sweet enough that you will not need to add sugar to this recipe. However, if you like to use dark chocolate, you may need to add ยผ cup of sugar to the chocolate sauce.
- You can add chopped nuts such as pistachio, walnuts, almond, or hazelnuts.
- If you like your cake more chocolaty, you can top it with a layer of chocolate ganache or melted chocolate after cooling it down. Afterwards, put it in the fridge for another 2 hours.
- You can top this no-bake cake with any fresh fruits you like.
- You can sprinkle some cocoa powder on top of the cake instead of powdered sugar.
Variations
Mixed Nuts lazy cake: Nuts go so well with this cake. However, adding mixed nuts to this Recipe elevates it and gives it more crunchiness. Also, you can add nuts along with some raisins and shredded coconut.
Peanut Butter Lazy Cake: For peanut butter lovers, adding โ cup of crunchy or smooth peanut butter to this cake will give it a fantastic flavour.

Of course, you can make it 2-3 days in advance. Actually, this cake takes time in the fridge to firm. So, making it in advance will give it enough time to firm.
Definitely, this cake freezes so well, just wrap in foil or plastic wrap, put in a well-sealed container, then put in the freezer for up to 2 months.
Store leftovers in the fridge for a maximum of 6-7 days.
