Italian cheesy zucchini bake recipe is an easy low-carb and keto-friendly dish. It is made with Zucchini, cheese, cream, butter and spices.

- Zucchini, sliced
- Heavy cream
- Eggs
- Garlic cloves
- Cheddar cheese
- Mozzarella cheese
- Butter
- Fresh parsley

- Red pepper flacks
- Onion powder
How to make Italian Cheesy Zucchini Bake
- First, slice up 4 medium-size zucchini.
- In a bowl mix eggs, heavy cream, garlic and all the spices.
- After that, butter up a baking dish and put the zucchini slices inside of it.
- Then, sprinkle the zucchini slices with some salt and black pepper.
- Also, add pieces of butter over the zucchini.
- Add ½ of the cheddar and mozzarella cheese over zucchini.
- Then, pour the heavy cream and egg mixture over zucchini.
- Meanwhile,
p reheat oven to 210˚C. - Then, bake for 30 minutes or until zucchini is cooked.
- After that, remove the cheesy zucchini from the oven and sprinkle the rest of the mozzarella and cheddar cheese over zucchini.
- Then, bake again for 20 minutes.
- Remove cheesy zucchini from the oven and let it cool down.
- Finally, garnish with fresh parsley and serve.
Tips and suggestions:
- You can add some pre-cooked minced beef; it will work so good. I have tried it before, and it was so delicious.
- Don’t overcook zucchini keep it firm.
- You can add any preferable spices like dry basil or Italian seasoning.
- Also, you can lower the calories of this recipe by using light cheddar cheese.
How to store a cheesy zucchini recipe
You can keep the leftovers in a well-closed container in the fridge for the next day. However, if you want to keep it over one day, freeze it.
