- Heavy cream
- Eggs

How To Make Easy Low Carb Zucchini Casserole (Keto)

One: Preheat the oven to 200C/392F. Wash, dry and slice the zucchini. Butter up a casserole dish and put the zucchini slices inside of it. Sprinkle the zucchini slices with some salt and black pepper (photo 1).

Two: Add pieces of butter over the zucchini, and then sprinkle half of the cheddar and mozzarella cheese on top (photo 2).

Three: In a bowl, mix eggs, heavy cream, garlic and all the seasonings (photo 3).
Four: Then, pour the egg mixture over the zucchini. Bake for 30-35 minutes or until zucchini is cooked.
Five: Remove from the oven and sprinkle the rest of the mozzarella and cheddar cheese on top. Then, bake again for 10 minutes until golden brown. Remove from the oven and garnish with fresh parsley and serve.
