    Keto Pizza Stuffed Mushrooms

    Keto pizza stuffed mushrooms are an excellent way of eating pizza while you are on a keto diet. Mushrooms stuffed with all the pizza ingredients such as tomatoes, cheese, bell pepper and olives.

    This dish is so delicious, low-carb and low-calorie meal. It is a super easy and perfect meal for dinner. So, if you are following a keto diet or a low-carb diet, this is your ideal meal. How ever you can still enjoy this dish if you aren't following any diet.

    What is in keto pizza stuffed mushrooms?

    The topping options are as you prefer them to be. I have used tomatoes, green pepper and green olives. Also, I have used the cheddar cheese but if you prefer to use mozzarella or any other cheese, do so.

    Regarding the spices:

    This recipe is hot! Because of using the red pepper flakes and the black pepper. So, if you don’t like it to be that hot, you can take the red pepper flakes out and only use the black pepper to give it a good taste.

    How to make keto pizza stuffed mushrooms

    1. Prepare the veggies, cut the tomatoes and green olives into halves. 
    2. Then chop the green pepper.
    3. In a bowl mix the green pepper, olives and tomatoes.
    4. Put all the spices on the vegetables and mix it well.
    5. Clean the mushrooms and carefully cut the stems off the mushrooms.
    6. Then place it in an oven tray.
    7. Fill mushrooms with chopped olives, green pepper, and tomatoes.
    8. Then top the mushrooms with the cheddar cheese.
    9. Prepare the oven on F (200 C).
    10. Bake for 20 minutes until the vegetables are cooked, and the cheese is melted.

    How to store it

    Store the mushrooms in a closed container in the fridge for a maximum of 2 days, reheat in the microwave or the oven. I prefer to eat it fresh. So, I bake what lasts for only one day.

    How to serve this low carb recipe:

    Serve it hot once it comes out of the oven. Because it is a low-carb meal, you can serve it based on the size of the mushrooms; I eat 2 large as the main meal.

    Tips for the recipe

    • In this recipe, I have baked these stuffed mushrooms. However, you can grill them. I think it will work fine. 
    • Add more spices if you like.
    • Replace cheddar with mozzarella.
    • Add black olives, spinach or feta cheese.

    Ingredients

    • 4 Mushrooms large
    • ⅓ cup Tomatoes
    • ½ cup Green pepper
    • ½ cup Green olives
    • 1 cup Cheddar cheese  shredded

    • ½ teaspoon Dry basil
    • ½ teaspoon red pepper flakes
    • ½ teaspoon Black pepper
    • ½ teaspoon Salt

    Instructions

    Notes
