Spicy rice and spinach stew is a flavourful and hot dinner recipe for cold winter days. I have learned to cook this spinach stew from my mother, but I have twisted the recipe a little bit by adding the hot sauce to it, which add a lovely chilliness to the stew. This spinach stew is totally delicious on its own, but adding any chicken or meat makes it a wonderful dinner.
Spinach is my family's favourite vegetable. We add it to almost everything; even sometimes, we love to eat it raw on chicken sandwiches.

Rice And Spinach Stew Ingredients

300 g fresh spinach leaves
1 onion, minced
Garlic, minced
Tomato sauce
Rice
Salt
Ground pepper
Ground coriander
Water or chicken stock
Butter
Hot sauce
Important tip: If you don't fancy spicy things, remove the hot sauce from the ingredients.

How To Make This Spicy Rice And Spinach Stew

In a large pot, add the butter and minced onion on medium heat for 1 minute, stir until the onion becomes translucent.
Add the spinach leaves, tomato sauce, salt, pepper and ground coriander.
Then add rice, minced garlic and water and bring to a boil, keep cooking for about 15 minutes. Then, lower the heat and let it simmer for another 10 minutes or until the rice is fully cooked.
Garnish with some chopped fresh coriander leaves (optional). Serve hot.

- 5 cups water or chicken stock
