    This easy vegetable stir fry with egg recipe is one of my favourites; It is loaded with vegetables and eggs, perfect for breakfast or lunch.

    This stir fry dish is a healthy, nutritious Low-Carb meal that I usually have for breakfast with a cup of coffee

    This is my take on the traditional egg recipe; the vegetables are a fresh addition while the chilli flakes give it a spicy kick.

    This easy egg recipe is a delicious, full meal with a lot of vitamins and protein, which will help keeping you full until your next meal.

    Vegetable Stir Fry With Egg Ingredients

    • Medium onion
    • Yellow bell pepper
    • Green bell pepper
    • Tomatoes
    • Tomato sauce
    • Butter
    • Eggs
    • Fresh spinach
    • Salt
    • Ground black pepper
    • Red pepper flakes
    • Parsley for serving (optional)

    Note
    This low carb breakfast recipe is spicy so if you don't like having something spicy for your breakfast then don't add the chilli flacks, only add the salt and the ground black pepper. You can add something to make this recipe your own like garlic powder or even some basil.

    How To Make Vegetable Stir Fry With Egg Step By Step

    • Firstly, chop all the vegetables ( green pepper, yellow pepper, onion, tomatoes).
    • Place a big skillet on the stove on medium heat, Then add all the chopped vegetables and the butter.
    • Stir occasionally keep it on the medium heat for 5 to 10 minutes.
    • Then, add the spinach, stir.
    • After that, add the tomato sauce and the spices, Then lower the heat and leave it to simmer for 5 minutes.
    • After that, make small four holes in the vegetables and add the eggs.
    • Leave it on the low heat until the egg is fully cooked.
    • Garnish with some chopped parsley (optional).
    • Serve hot.

    How To Serve Vegetable Egg Stir Fry

    If you like, you can eat it plain, or you can add a piece of bread to it. Even some people who are not following a ketogenic diet add it to cooked rice.
