    This easy vegetable stir fry with egg recipe is made with spinach, bell pepper, onion, tomatoes and eggs. It is healthy, delicious and perfect for breakfast or lunch, and It only takes 15 minutes to be ready.

    This vegetable stir fry with egg is low-carb and keto friendly meal. Serve it with Thyme Tea, Cucumber Water, Strawberry Milk Tea or Chocolate Milk Tea for breakfast.

    Ingredients For Vegetable Stir Fry With Egg

    • Onion: Use red or white onion.
    • Bell pepper: I used yellow and green bell peppers.
    • Tomatoes
    • Tomato sauce
    • Butter: To saute the vegetable, you can use olive oil instead.
    • Eggs

    • Seasonings: Salt, ground black pepper and red pepper flakes.

    • Add in more veggies, such as chopped zucchini, carrot or sweet corn.
    • Add in fresh herbs such as fresh basil or cilantro.
    • If you like it extra spicy, drizzle hot sauce on the top.
    • Add in some mushrooms.
    • If you like garlic, add in 2 minced cloves of garlic.

    How To Make Vegetable Stir Fry With Egg

    One: Chop all the vegetables ( green pepper, yellow pepper, onion, tomatoes).

    Two: Place a big skillet on the stove over medium heat, melt the butter, then add all the chopped vegetables. Stir occasionally keep it on the medium heat for 5 to 10 minutes.

    Three: Add in the spinach, stir. Then add the tomato sauce and the spices.

    Four: Lower the heat and leave it to simmer for 4-5 minutes.

    Five: Crack the eggs over the veggies, leave them to cook on the low heat until fully cooked.

    Six: Garnish with some chopped parsley (optional) and serve.

    This dish is perfect for meal prep. Make a big patch and divide it between containers and keep them in the fridge to enjoy this easy breakfast later.

    • This recipe has a hint of spice in it, if you don't like it spicy skip the chilli flakes.
    • You don't need to use the whole egg. If you like, you may use the egg whites only.

    Ingredients

    • 1 medium onion
    • 1 yellow bell pepper
    • 1 green bell pepper
    • 2 medium tomatoes
    • 1 tablespoon butter
    • 4 eggs
    • 1 cup fresh spinach
    • ¼ teaspoon salt
    • ⅛ teaspoon ground black pepper
    • ⅛ teaspoon red pepper flakes
