An easy beef Rissoles recipe loaded with veggies. These classic appetizers are Juicy, delicious and flavorful and will be made in less than 20 minutes.
In a big mixing bowl, grate the onion, zzucchini, and carrot using a box grater, then add the Breadcrumbs and mix well until combined.
½ cup breadcrumbs, 1 zucchini, 1 carrot, 1 onion
Net, add ground beef, garlic, egg, Worcestershire Sauce, salt, pepper, oregano and thyme. Mix well until incorporated.

Now, scoop ¼ cup of the mixture put between your hands and form a pattie.
Heat the oil in a large skillet, add the first patch of the patties and cook for 3-4 minutes, then flip them and cook for another 3-4 minutes or until golden brown.

Transfer them into a serving dish, garnish with some chopped parsley and serve with your favourite sauce.

Rissoles are versatile and flexible which can be made with different mince and fillings; the variations are endless.
For added spice, you can add extra chilli pepper or jalapeno to the added spices.
You can substitute ground beef with lamb, turkey or chicken.
Make the them a little larger, and when you shape them, fill them with a cube of cheese. Roll the rissoles in flour and fry until golden brown.
You may add your preferable herbs, soy sauce, sea salt flakes, lemon zest for added flavour.
You can substitute breadcrumbs with rolled oats or cornflakes.
Make ahead of time: Make the patties and keep in the fridge for up to 2 days before cooking; you can also freeze them for up to a month.To store: Keep in the fridge for 3-4 days.To freeze: You can freeze them cooked or uncooked for a month if stored in an airtight container. Thaw overnight in the fridge.Reheating instructions: Reheat them in the microwave for 30-60 seconds.For baking: Spray a baking tray well with oil. Place the patties on the tray, and spray the top with oil. Bake at 200C/390F for 20 minutes, flip, then bake for another 5 minutes until golden.
