Line a 12-cup muffin tin with paper liners and put 1 Oreo chocolate sandwich in each of the muffin cups.
Place the remaining Oreos in a large ziptop bag and crush using a rolling pin.
In a mixing bowl, beat the cream cheese, sugar, vanilla extract, sour cream and salt until smooth about 1-2 minutes.
In another mixing bowl, whisk the heavy cream until stiff peaks form.
Now, fold the whipped cream into the cream cheese mixture until combined.
Stir in half of the crushed Oreos.
Spoon the mixture into each muffin cup, smooth the top, then sprinkle all over with remaining crushed Oreos.
Place the cheesecake bites in the fridge for 4-6 hours until firm.

Prepare cream cheese, sugar, vanilla extract, and sour cream mixture (cheesecake) 2 days in advance for better texture and flavor.
If you use room-temperature cream cheese, you can be assured that it will whisk up easily and evenly without having lumps.
As much as it is painfully hard to resist the urge to devour these Oreo cheesecake bites quickly, you have to wait until it is thoroughly chilled in the fridge before you serve them. It allows for the firmer structure of the dish.
