Amazing Kunafa cheesecake With Mango! A super delicious blend of 3 layers in one cup: crispy Kunafa pastry, creamy cheesecake filling and sweet mango chunks.
Put the Kunafa pastry into the food processor and pulse for a few seconds until it is broken up into small pieces (don't turn it into powder).
Transfer the pastry into a mixing bowl, and mix with the melted butter.
Heart a large skillet over medium heat, put the pastry and stir constantly until golden brown (you may cook the pastry in batches if you don't have a large skillet.)
Put the cooked pastry into a bowl, pour the honey over it, stir and allow it to cool.
Make the filling
In a mixing bowl, whisk the cream cheese, vanilla and icing sugar together.
In another bowl, whip up the whipping cream till stiff peaks form.
Now, fold whipped cream into the cream cheese mixture, and put it in the fridge for30 minutes.
To assemble
Put a layer of kunafa pastry in each cup, top it with a cream cheese layer and mango cubes. Repeat the layer and then top with more mango cubes and a sprinkle of some pistachios.
Notes
When I buy the mangoes, I make sure they are ripe and sweet. You may also replace mango with strawberry or blueberry.
