Add the butter to a mixing bowl, and use a hand mixer to beat it until fluffy.

Add in the peanut butter and beat again until combined.

Now, add in the vanilla extract and powdered sugar (you can add the sugar gradually) and mix until fully incorporated.

Now, put the dough in the fridge for 1-2 hours to firm up.
Scoop about 1 tablespoon of the dough and roll it between your hands, forming a ball; repeat with the remaining batter, then put in the fridge for 30 minutes or so, then serve.
Notes
If you’re in a rut for ingredients, there’s a good chance that you won’t have powdered sugar at home. You can make your own powdered sugar by plopping some granulated sugar in a food processor.
At any point, if there are too many dry ingredients for the balls to clump and maintain their shape, feel free to add a bit of melted butter for moisture.
Some Variations
Although this recipe tastes excellent, all plain and simple, there is a chocolate variation you can try. Just take the cold peanut butter balls into warm melted chocolate and allow them to dry on a baking sheet. You’ll love this if you’re a chocoholic.
If you don’t like chocolate and want to make these balls more attractive and seem more like “candies”, then you can also add some colourful sprinkles.
We’ve mentioned that you use smooth peanut butter. However, if you like that texture, you can also use the crunchy one.

You can even make these healthy or a power snack to give you energy on the go. Just pack these with some chia seeds, oats, or even dried cranberries and raisins. It might be a little hard to pack on; make sure to use lots of peanut butter and butter.
Store: At room temperature, they will last a day or two. They will last a week and a few days if they are in the fridge.Freeze: Line these in an air-tight container with parchment paper on top and bottom. They’ll stay good in the freezer for about a month.
