Delicious golden syrup cookies with a caramel flavor and crispy texture! They take 10-15 minutes to prepare, which makes them perfect for a weekday afternoon snack.
Preheat the oven to 180c / 350f and line a large baking sheet with parchment paper.
In a saucepan, melt together butter, sugars, and golden syrup over low heat (stir frequently).
100 g Butter, 50 g Light Brown Sugar, 50 g Caster Sugar, 2 tablespoon Golden Syrup
Take off the heat and stir in vanilla extract, flour, oats, and baking soda.
100 g Self Raising Flour, 1 teaspoon Vanilla Extract, ½ teaspoon Baking Soda, 100 g Oats
Spoon tablespoons of the dough onto the baking sheet (leave space between them) and bake for 10 minutes until golden.
Allow them to cool for 10 minutes.
Notes
You may get worried that your cookies are already golden brown in color yet soft in texture. Don't be, because they eventually firm up when they're out of the oven and cooling. This is why I recommend leaving the cookies for at least 5 minutes in a cooling rack before serving.
