Beat the eggs with sugar in a large mixing bowl until pale.
1 cup caster sugar,
2 large eggs
Mix in the applesauce and butter until combined.
¾ cup applesauce,
½ cup butter
Stir in flour, baking powder, cinnamon, and baking soda until incorporated.
1 ½ cups all-purpose flour,
1 teaspoon baking powder,
½ teaspoon baking soda,
1 teaspoon ground cinnamon
Transfer the batter to the cake tin and bake in the oven for 45-50 minutes.
Allow to cool completely before cutting.
Notes
If you want to have an easier time cleaning up, you can use a disposable aluminium loaf pan, which is easy to transport also once the cake is ready.
If you can, place the loaf cake in the centre of the oven. We’d like it to be cooked fast and evenly as well.
