Cook the beef: In a small pot add the ground beef, minced onion and all the spices on medium heat.
Then, add 2 cups of water, cook for 20 to 25 minutes or until the meat is fully cooked and all the liquids have reduced.
Roast the eggplant: Peel the eggplants then wash and drain. Spray an oven sheet with oil then place the eggplants and spray the top and bottom of each piece with oil.
Bake for 20 minutes or until the eggplants cooked.
In a small bowl, add the tomato sauce, minced garlic, salt and pepper then stir.
Assemble: Place a layer of the grilled eggplants in an oven dish and top with some of the tomato sauce.
Then, add a layer of the beef. Add some tomato sauce. Repeat with the remaining eggplants.
Bake for 40 minutes. Garnish with some chopped parsley. Serve hot.
