This Skillet Breakfast Scramble is my special egg breakfast recipe, loaded with ground beef, spinach, and bell pepper. It is a colorful meal full of vitamins and proteins.
Chop the onions, green and yellow bell peppers and tomatoes to small pieces.
In a medium-sized skillet add the butter, chopped bell peppers and onions, stir on medium heat until softened.
Add the ground beef and spinach, and stir. Then add the tomatoes, salt and ground pepper.
Add the eggs and stir until all ingredients mix well. Lower the heat for 2 minutes, and then turn off the heat.
Add green olives on top. Garnish with some fresh chopped parsley and enjoy!
Notes
In this recipe, I used leftover pre-cooked ground beef. Don't use raw ground beef. Feel free to skip the ground beef to make this dish vegetarian or replace it with mushrooms.
