These Keto easy coconut flour pancakes are so healthy and made with greek yogurt. Using coconut flour in this pancake recipe will make them fluffy and soft.
Then, add the vanilla extract, powdered erythritol, and continue whisking.
After that, add the greek yoghurt, and whisk.
In a small bowl, add the baking powder to coconut flour and stir.
Finally, add the coconut flour to the eggs mixture, stir.
Pour the batter into a measuring cup.
Spray a hot pan with oil and start pouring the batter in small batches.
Once small bubbles appear on top of the pancakes flip carefully on the other side.
Add topping from your choice, enjoy.
Notes
Using eggs at room temperature gives better results in this pancake recipe.
Use a good non-stick pan to help you in flipping the pancakes.
If you top these pancakes with something sweet like maple syrup or chocolate, you can escape putting powdered erythritol in the batter unless you have a sweet tooth.
I don't recommend storing these pancakes; just make as much as you are going to consume.
