Instructions
Chop the smoked salmon to small pieces.

In a bowl whisk the eggs, heavy cream salt and black pepper.
8 eggs,
¼ teaspoon salt,
⅛ teaspoon ground black pepper,
¼ cup heavy cream
Add the butter to a hot skillet over medium heat.
1 tablespoon butter
When the butter melts add the egg mixture, stir.
When the egg is fully cooked turn off the heat, then add the smoked salmon and mix.
Sprinkle the chopped parsley over the top. Serve hot.

Notes
For best results, don't overcook the eggs.
Don't cook over high heat; to get a fluffy egg cook it over medium heat.
I recommend using a nonstick skillet for easy cook and clean.
