olive oil

potatoes

Spices

teaspoon
salt

teaspoon
ground black pepper

teaspoon
cayenne pepper

teaspoon
cajun seasoning

sprig
fresh thyme
Instructions
Wash the potatoes, peel then cut them however you like.
In a bowl, mix minced garlic, olive oil, cayenne pepper, cajun seasoning, salt, pepper and thyme.
Add the chicken in the mixture and massage the chicken with the spices well then set aside.
Preheat the oven at 180C.
In a baking dish, spread the potatoes then seasoned them with some salt and pepper.
Top the potatoes with the chicken then bake for 50 minutes.
Garnish with chopped parsley then serve.
Notes
You can skip peeling the potatoes.
If fresh thyme isn't available, you may use dried thyme.
Replace thyme with sage or rosemary.
Serve this one-pan meal with a green salad, coleslaw or any salad you fancy. Also, you can serve it with white rice or pasta.
