tahini paste

Instructions
In a bowl, mix tahini and water using the whisk or a fork until well combined (tahini is a dense paste using water is important to lighten the tahini)
Add the minced garlic, olive oil, vinegar, lemon juice, salt, pepper and cumin, mix well.
Taste and adjust the salt.
Notes
Tahini
brands vary in consistency
; for diluting it, you may need more ¼ cup of water based on the consistency you want.
When you add water to tahini, you need to
whisk vigorously
to combine them well.
Tahini will thicken
as it sets in the fridge; if you want to thin it out a little, mix in some water.
