Learn how to make oven baked stuffed chicken breast with spinach and mozzarella cheese the easy way! This recipe is easy to make and suitable for lunch or dinner.
Preheat the oven to 180C/356F and grease a baking dish with vegetable oil or olive oil.
Wash the chicken and then pat dry with a paper towels.
Use a sharp knife to slightly cut the chicken breast in half, so you have enough space for the filling but not wholly separating the two halves.
4 Medium size chicken breasts
Prepare a small bowl with the spices mixed inside, and spread it all over the chicken, not forgetting between the cut.
1 teaspoon Onion powder, 1 teaspoon Garlic powder, 1 teaspoon Dried basil, 1 teaspoon Cinnamon powder, ½ teaspoon Salt, ½ teaspoon Ground black pepper
Wash the spinach and make sure to drain it very well so that the chicken does not become overly wet.
100 g Fresh Spinach leafs, ½ cup Green olive, ½ cup Cherry tomatoes
Cut the tomatoes and the Green olive in halves.
Evenly distribute the filling inside the chicken, make sure it is full but not overflowing.
Neatly place the stuffed chicken breasts in a single layer in the prepared baking dish. Cover the dish with aluminum foil and Bake in the preheated oven for about 30-40 minutes (cooking time differs depending on the thickness of the chicken).
Uncover the baking dish and spread the cheddar cheese on top of the chicken breast and put it back in the oven for 5-10 minutes more until the cheese melts.

Notes
To add some heat to your dish, add ½ teaspoon of red pepper flakes, cayenne pepper or chili powder
You can replace cheddar cheese with mozzarella, parmesan cheese or Swiss cheese.
Add some fresh herbs like basil or dill.
Use large chicken breasts to be able to stuff them.
