This African spinach stew with rice and tomato sauce is a flavourful, delicious and easy to make. It makes a wonderful hot dinner for cold winter days.
Add the spinach leaves, tomato sauce, hot sauce, salt and pepper.
300 g fresh spinach leaves, ½ cup tomato sauce, ½ teaspoon ground pepper, ½ teaspoon salt, 1 tablespoon hot sauce
Then add rice and water and bring to a boil, keep cooking for about 15 minutes. Then, lower the heat and let it simmer for another 10 minutes or until the rice is fully cooked.
½ cup rice, 5 cups water or chicken stock
Garnish with some chopped fresh coriander leaves (optional). Serve hot.
Notes
I use a tablespoon of hot sauce in this recipe to flavour it; if that is too much for you, feel free to reduce it to ½ tablespoon or even skip it.
This recipe is vegetarian. However, if you are a meat lover, you can add some cooked chicken, turkey, shrimp, fish or beef.
Add fresh herbs such as cilantro, dill or parsley.
Storage
To Store the stew: Store leftovers in the fridge for 2-3 days.
Freezing: This stew freezes so well. Just put it in a leakproof container and put it in the freezer for 1-2 months.
To reheat: allow it to thaw at room temperature, put it in the microwave, or heat it on the stove.
