In a mixing bowl, add the ground chicken, parsley, salt, pepper, cumin, red pepper flakes, ½ teaspoon of paprika, onion, garlic, mint, bread crumbs, egg and olive oil.
Using your hand, mix well until combined.
Wet your hand with water then form the chicken mixture into balls.
Arrange the kofta balls in a plate then brush them with a mixture of tomato sauce and ½ teaspoon of paprika.
Spray the grill with oil and heat to medium.
Place the kofta balls on the grill and cook for 8-10 minutes on each side or until fully cooked.
Serve immediately.
Notes
Brushing the chicken kofta with the mixture of tomato sauce and paprika is optional. However, I suggest doing it because it gives the chicken an excellent dark red colour and a pleasant taste as well.
When you form the chicken mixture into balls, it is important to wet your hands with a little bit of water because the mixture is sticky and it will be so messy if you didn't wet your hand. So don't skip that.
You can use skewers in forming the chicken kofta.
Don't forget to grease the grill with oil; you don't want the kofta to stick to the grill.
