Candied lemon slices are thin lemon slices that have been cooked in sugar and then dried out. Don't worry; this process of candying lemons is so quick and easy.
In a saucepan, add water and sugar on medium-low heat until the sugar is fully dissolved.
Add lemon slices and simmer for about 15 minutes or until the lemon slices become slightly translucent (try to keep the lemon slices in one layer).
Turn off the heat and place the lemon slices on a single layer on a wire rack.
Let the lemon slices cool down for about 1-2 hours. Then cover them and put them in the fridge.
Notes
Feel free to use this recipe to candy other citruses such as orange and grapefruit.
If your syrup becomes too thick while simmering, feel free to add more water to thin it out.
Let these candied lemon slices set at room temperature for a whole day before storing them.
You need to slice the lemon as thin as possible. You can either use a mandoline or a sharp knife. If the lemon slices are too thick, they will take too much time to cook.
If you don't like the lemon slices to be sticky, coat them with some sugar.
Don't get rid of the rest of the lemon syrup; save it in a jar; it makes a great addition to a cup of tea or lemonade.
Making a healthier version of candied lemon slices
In this case, replace sugar with honey, and because honey is sweeter than sugar, we will use only half a cup of honey. To make this lemon candy using honey, follow the instructions below:
Heat half a cup of honey and 3 tablespoon of lemon juice in a skillet on medium heat.
Add the lemon slices and cook for 5-8minutes, then flip to the other side and cook for another 5 minutes. Simmer until peel is tender.
Leave the lemon slices to cool and dry on a wire rack.
