Instructions
Preheat the oven at 180C / 350F and line a cookie sheet with parchment paper.
Start by beating the egg 1 to 2 minutes using a hand mixer, until double in size.

Then, add the butter, erythritol, coconut milk and orange extract keep mixing until well combined.

3 tablespoon unsalted butter,
1 teaspoon Orange extract,
¼ cup unsweetened coconut milk
In another bowl, mix almond flour and baking soda.
2 cups Almond flour,
½ teaspoon Baking soda
Combine wet and dry ingredients together and mix well until a smooth dough formed.
Fold in the chocolate chips and stir with a wooden spoon or spatula.
1 cup dark chocolate chips
Now, refrigerate the dough for about 30 minutes.
Form 16 balls from the dough, then flatten the balls forming cookie shapes.
Place the cookies into the baking sheet, leaving 1 inch between each other. Bake the cookies for 10-15 minutes.
Let the them cool on a wire rack before serving.
Notes
The cookies will come from the oven very soft, so don’t move them until they completely cool down.
Don't overbake the cookies or they will come out dry.
I recommend using a cookie scoop to scoop the cookie dough, so all the cookies will be the same size and shape.
It is so important to refrigerate the cookies before baking them; otherwise, the chocolate chips will spread greatly.
To store:
Put the cookies in an airtight container. They will last for 2-3 days at room temperature or a whole week in the fridge.
