The shrimp salad sandwich is creamy, well-seasoned shrimp sandwiched between two pieces of bread. Perfect for lunch or serve it with fries and salad for a perfect dinner.
Melt the butter in a large skillet over medium-high heat.
Place the shrimp and cook for 2 minutes or until it is not translucent (don't overcook).
Transfer the shrimp into a mixing bowl, let it cool down for 10 minutes, then add paprika, salt, ground black pepper, chopped pickles, green onion, parsley, bell pepper, lemon juice, mayonnaise and greek yoghurt.
Mix well until combined. Then, scoop the mixture into the hot dog buns, sprinkle some paprika on top and serve.
Notes
If you don't like soft bread, you can splatter the hot dog buns with butter and toast them in medium-low heat.
Don't overcook the shrimps lest they become too lumpy for the sandwich.
Let the salad cool down for 10 minutes before putting them into the hot dog buns. It will allow the flavor to sip in and won't make the buns too soft.
If you have a soft spot for spicy food, adding diced red onion will give the salad a spicy tint. You may also add a pinch of cayenne pepper.
Add smashed avocado to the salad for a creamier and sweeter version of the sandwich.
