This is the best sugar free chocolate cookies recipe ever. These Chocolate Cookies are made of chocolate chips, cocoa and almond flour. They are healthy and almost melt in your mouth.
Firstly, in a medium-size bowl, add all the dry ingredients, and whisk.
1 ½ cups almond flour, ½ teaspoon baking soda, ⅓ cup erythritol, 3 tablespoon unsweetened cocoa powder
Then, add the softened butter, whisk until all combine.
¼ cup butter
After that, add the eggs and vanilla extract, keep whisking.
2 eggs, 1 teaspoon vanilla extract
Finally, add the chocolate chips and stir using a spatula.
¼ cup unsweetened dark chocolate chips
Line a baking sheet with a parchment paper.
Using a dough scoop, scoop one ball each time and place on the baking sheet.
Note: these cookies will spread a bit so, try to keep a free space between each one.
Carefully try to flatten the top of each cookie using the spatula.
Then, add some chocolate chips on the top of each cookie.
After that, bake for around 10 to 15 minutes on 210C.
Notes
Sweetener: I always use erythritol in my recipes; in this cookie recipe, both erythritol and powdered erythritol will work fine and will give the same result; I have tried both.
Almond flour: it is better to sift the almond flour to get rid of any lumps. Don't substitute almond flour with coconut flour; it won't work.
Cocoa powder: use unsweetened 100% cocoa powder; Hershey's natural unsweetened 100% cocoa is a good brand to use.
Tips!
If you enjoy sweeter cookies, you can add ½ cup of erythritol instead of ⅓ cup.
You can add some chopped nuts on the top of each cookie if you fancy.
These cookies come out of the oven soft, be careful with them and leave them to cool down on a cooling rack.
You can be creative and use your imagination to decorate them if you like.
