This cabbage roll soup is a comforting and super delicious soup made with almost the same ingredients used in making a stuffed cabbage roll recipe and in way less effort and time.
In a pot, heat the oil on medium heat then add the ground beef, salt, and black pepper. Break up the meat using a wooden spoon. Cook until the meat is brown (about 5 minutes).
500 g ground beef, 1 teaspoon salt, ¾ teaspoon ground black pepper, 2 tablespoon vegetable oil
Add garlic, onion, and carrots and cook for another 2 minutes, stirring occasionally. Add cabbage, dill, bay leaf, tomato sauce, chicken broth, and rice, stir.
3 cloves garlic, 1 onion, 550 g tomato sauce, 4 cups chicken broth, 2 carrots, ½ cup jasmine rice, 2 bay leaves, 5 cups green cabbage
Add the tomato paste and Bring everything to a boil then lower the heat and simmer for 20-30 minutes or until the rice is fully cooked.
2 tablespoon dill, 1 tablespoon tomato paste
Garnish with chopped dill and serve.
Notes
I prefer to chop the cabbage coarsely for better texture.
I used green cabbage in this stew; however, you can use red cabbage if you already have it in your fridge. You will have the same result.
If you like to replace white rice with brown rice, you will have to increase the cooking time by 10-15 minutes.
