Instructions
Heat some oil in a skillet over medium heat. Add the onions and garlic and sauté' until the onion softens about 3-4 minutes.

Then add the crushed tomatoes, salt, black pepper, Italian seasoning, and chilli flakes. Simmer for about another 8-10 minutes then turn off the heat.

Now, divide the mixture between two small baking dishes or one big dish. Crack the eggs over the mixture in the baking dishes.

Next, sprinkle the cheddar cheese on the top and then bake for 15 minutes.

Garnish with some chopped parsley and serve.

Notes
I recommend that you grate the cheddar cheese yourself because freshly grated cheese melts so well and gives the dish a better taste.
You may bake this dish in a large casserole dish instead of 2 small casserole dishes.
