Instructions
Preheat the oven to 200C/392F.
Wash, dry and slice the zucchini. Butter up a casserole dish and put the zucchini slices inside of it.

Sprinkle the zucchini slices with some salt and black pepper.

Add pieces of butter over the zucchini, and then sprinkle half of the cheddar and mozzarella cheese on top.

1 cup Mozzarella cheese
In a bowl, mix eggs, heavy cream, garlic and all the seasonings.

¼ teaspoon onion powder,
¼ teaspoon red pepper flacks
Then, pour the egg mixture over the zucchini. Bake for 30-35 minutes or until zucchini is cooked.
Remove from the oven and sprinkle the rest of the mozzarella and cheddar cheese on top. Then, bake again for 10 minutes.
Remove from the oven and garnish with fresh parsley and serve.

Notes
Don’t overcook the zucchini; keep it firm.
You can lower the calories of this recipe by using light cheddar cheese.
Variations
You can add some pre-cooked ground beef, ground turkey or chicken.
Use any type of cheese you like.
You can add any preferable spices, like dry basil or Italian seasoning.
Use parmesan cheese instead of cheddar cheese.
Garnish your casserole with chopped green onions or fresh basil.
