Boom Boom Shrimp
My Boom Boom Shrimp is an incredibly easy and delicious dish in which I dip jumbo shrimp into a tempura batter, fry until crispy, and serve it with the best sweet and spicy homemade Boom Boom Sauce ever.

Large Shrimp

Instructions
In a large mixing bowl, mix the flour, baking powder, cornstarch and salt until combined. Add water to the mixture and whisk well.

¼ cup Cornstarch,
1 teaspoon Baking Powder,
½ teaspoon Salt,
½ cup Water
In a large frying pan, heat the oil.

Now, dredge the shrimps in the flour mixture (one by one), then put them into the pan, and cook for 2-3 minutes on each side.
450 g Large Shrimp
You may need to cook your shrimps in batches if your frying pan isn't large.
After cooking the shrimps, put them in a paper towel to drain.
To make the sauce
In a bowl, mix together mayonnaise, peanut butter, sweet chili sauce and salt and pepper.
⅓ cup Mayonnaise,
1 teaspoon Peanut Butter,
¼ cup Sweet Chili Sauce,
¼ teaspoon Salt,
¼ teaspoon Black Pepper
Serve the shrimp with the sauce separately, or you can drizzle the sauce over it.
Notes
If you are using frozen shrimp, make sure that you defrost it before using it.
