This seasoned baked cod is SUPER tender, juicy and ready in just 20 minutes. Simply coat the cod filets with the flavorful seasonings and bake until the cod is perfectly flaky for a simple and quick family dinner.
Preheat the oven at 200C / 390F then place the cod in an ovenproof baking dish.
In a bowl, add minced garlic, melted butter, olive oil, lemon juice, cayenne pepper, paprika, salt, ground black pepper and fresh thyme. Stir well until combined.
2 cloves garlic, minced, 1 tablespoon olive oil, juice of a half lemon, 2 tablespoon butter, melted, ⅛ teaspoon salt, ⅛ teaspoon ground black pepper, ⅛ teaspoon cayenne pepper, 1 spring fresh thyme, ¼ teaspoon paprika
Use a brush to spread the mixture thoroughly covering the whole cod.
2 cod fillets
Bake for 10-15 minutes or until fully cooked (flakes easily ).
Garnish with some chopped parsley then serve.
Notes
You can use frozen cod, just let it defrost at room temperature then get rid of all the excess water using a kitchen towel.
You may prepare the marinade 2 days in advance and store it in the refrigerator until you’re ready to make the fish.
Be careful not to overcook the cod fillets, or they will turn dry instead of juicy.
