Single Serving Baked Oatmeal
I love to start my day with a nutritious and delicious breakfast! This single serving baked oatmeal is the perfect way for me to do just that.

fresh blueberries

lemon zest

Instructions
Preheat the oven to 200C / 390F.
In a bowl, mix oats, Greek yogurt, vanilla extract, Lemon zest, eggs, sugar and and blueberries (save some blueberries to top with).
Pour the mixture in a medium-sized ovenproof dish or divide the mixture between two small baking plates (as I did).
Spread the rest of the blueberries equally on top of the mixture.
Bake for 40-45 minutes.
Remove from the oven then serve hot.
Notes
Don't use frozen blueberries; I find that using frozen blueberries produces a slightly mushy baked oatmeal, which I don't prefer.
Don't use steel-cut oats; they do not absorb the wet ingredients quite easily, which badly affects the texture of the recipe.
