Instructions
Preheat the oven to 180C / 350F and line a 2lb loaf tin with parchment paper.
Cream together butter and sugars until pale.
½ cup Butter,
½ cup Caster Sugar,
⅓ cup Light Brown Sugar
Whisk in eggs and vanilla extract and fold in flour and baking powder.
3 Large Eggs,
1 teaspoon Vanilla Extract,
1 ¾ cups All purpose Flour,
1 teaspoon Baking powder
Stir in blueberries and mashed bananas, and mix until combined.
2 Bananas,
2 cups Fresh Blueberries
Scoop the batter into the loaf tin and bake for 50-55 minutes.
Allow to cool, cut and serve.
Notes
Using ripe bananas is the key to making bread with a sweeter flavor and moister texture.
