    Moist Blueberry Banana Bread

    Blueberry Banana Bread—oh my gosh! This delicious fruity cake is incredibly moist, sweet and loaded with fresh, juicy blueberries. YUM!

    Blueberry Banana Bread Recipe

    In my opinion, adding blueberry to the classic banana bread is a genius idea and an excellent way to transform traditional banana bread into a more delicious cake.

    I am so proud of how this recipe turned out! I used fresh blueberries, which I highly prefer over frozen for a better texture and flavor. I also use ripped bananas, which help make a sweet and moist cake.

    For me, this is the perfect treat to include fresh fruits in. If your kids like mine and don't like eating fruits, bake this oh-so-fruity cake at home and they will LOVE IT!

    I like to pair it with a cup of Strawberry Milk Tea (Boba) or Oat Milk Hot Chocolate.

    You'll Need

    Note: This is an overview of the ingredients. See the recipe card for full information on ingredients and quantities.

    Butter. I used softened butter. It adds richness to this cake.

    Sugar. I used both caster sugar and light brown sugar in this recipe.

    Eggs. I used 3 large eggs at room temperature.

    Vanilla Extract. Vanilla extract enhances the flavor.

    Flour. I used all-purpose flour.

    Baking Powder. Allow the cake to rise.

    Bananas. I used ripe bananas. Using ripe bananas is the key to making bread with a sweeter flavor and moister texture.

    Blueberries. I used fresh blueberries; I found that they gave the cake a better texture than frozen ones.

    How to Make The Recipe

    One: Preheat the oven to 180C / 350F and line a 2lb loaf tin with parchment paper.

    Two: Cream together butter and sugars until pale. Whisk in eggs and vanilla extract and fold in flour and baking powder.

    Three: Stir in blueberries and mashed bananas, and mix until combined.

    Four: Scoop the batter into the loaf tin and bake for 50-55 minutes. Allow to cool, cut and serve.

    How Do You Quickly Ripen Bananas?

    Use the oven method to overripe your banana quickly. To do this, you just simply need to bake your unpeeled banana at 140°C for 20 minutes on a baking sheet.

    Wait until the banana skins are all black, and ta-da! You already have sweeter bananas you can use right away.

    Ingredients

    • ½ cup Butter , softened
    • ½ cup Caster Sugar

    • 1 ¾ cups All purpose Flour
    • 1 teaspoon Baking powder
    • 2 Bananas , over-ripe and mashed
    • 2 cups Fresh Blueberries

    Instructions

    • Cream together butter and sugars until pale.
      ½ cup Butter, ½ cup Caster Sugar, ⅓ cup Light Brown Sugar

      3 Large Eggs, 1 teaspoon Vanilla Extract, 1 ¾ cups All purpose Flour, 1 teaspoon Baking powder
    • Stir in blueberries and mashed bananas, and mix until combined.
      2 Bananas, 2 cups Fresh Blueberries
    • Scoop the batter into the loaf tin and bake for 50-55 minutes. 
    • Allow to cool, cut and serve.
