In my opinion, adding blueberry to the classic banana bread is a genius idea and an excellent way to transform traditional banana bread into an even better and more enjoyable treat.
I am so proud of how this recipe turned out! I used fresh blueberries, which I highly prefer over frozen for a better texture and flavor and ripped bananas, which were sweet and soft.
The cake tastes distinctively fruity and sweet with a hint of tartness thanks to the acid that comes from the berries.

Ingredients

Butter. I used softened butter to create a delicate touch and texture to your cake. It also adds richness to the flavor.
Sugar. I used both caster sugar and light brown sugar in this recipe. The brown sugar not only gives the cake sweetness but also helps in giving it color and flavor.
Eggs. I used 3 large eggs as they assist in the leavening of the batter.
Vanilla Extract. Vanilla extract enhances the flavor.
Flour. I used all-purpose flour, You may use whole wheat flour instead.
Baking Powder. Allow the cake to rise.
Bananas. I used ripe bananas.
Blueberries. I used fresh blueberries; I found that they gave the cake a better texture than frozen ones.
Variations & Substitutions
- Use oil instead of butter; cake made with vegetable oil produces a moist texture. You may use vegetable oil, sunflower oil or avocado oil.
- Don't limit yourself to just blueberries and bananas in your cake. If you are fond of chocolates why not add some chocolate chips? Either white, dark, or milk will be good. If you plan to serve this cake as a pair of your coffee, you may mix some toffee into your batter.
- Sweet, tart, fruity… and spicy? Well, everything is possible with this recipe. If you want some spice to your cake, you may as well add a little pumpkin spice or nutmeg, whichever suits you best.
- Add a bit of orange zest for another burst of fruity flavor.
- Top this cake recipe with salted caramel, cream cheese, sugar drizzle icing or coffee glaze to make it even more delicious.

How to Make Blueberry Banana Bread - Step By Step
One: Preheat the oven to 180C / 350F and line a 2lb loaf tin with parchment paper.
Two: Cream together butter and sugars until pale. Whisk in eggs and vanilla extract and fold in flour and baking powder.
Three: Stir in blueberries and mashed bananas, and mix until combined.
Four: Scoop the batter into the loaf tin and bake for 50-55 minutes. Allow to cool, cut and serve.

How Do You Quickly Ripen Bananas?
Use the oven method to overripe your banana quickly. To do this, you just simply need to bake your unpeeled banana at 148°C for 20 minutes on a baking sheet.
Wait until the banana skins are all black, and ta-da! You already have sweeter bananas you can use right away.
Serving Suggestions
I like to pair it with a cup of Strawberry Milk Tea (Boba) or Oat Milk Hot Chocolate.
