    Unsalted Butter. If you want your loaf cake light and fluffy, unsalted butter is the best choice for you! Plus, it doesn't affect the taste of your loaf cake too, allowing the fresh strawberries to really sparkle on their own.

    Caster Sugar. Why can't I just use regular sugar? That's probably what's in your mind. Well, caster sugar dissolves so easily in liquid, which means that it can create a smoother and better loaf cake batter for you!

    Eggs. Eggs help bind all the ingredients you have in your cake batter, so consider them a must! Plus, eggs also make it easier for you to create a moister loaf cake. Plus, they impart a rich addition to your loaf cake.

    Vanilla Extract. For any baking endeavor, you gotta thank vanilla extract for always being there as an excellent flavoring agent. Vanilla extract enhances the overall flavor of your cake by balancing the taste of strawberries and sugar!

    Milk. Milk has a simple yet important role in baking your loaf cake. It combines the dry ingredients, plus it makes sure that the loaf cake becomes moist and fluffy at the same time.

    How to make Strawberry Loaf Cake?

    Make the Strawberry Cake

    One: Preheat the oven to 180ºC / 350ºF and line a 2lb loaf tin with baking paper. Also, toss the chopped strawberry into 1-2 tablespoons of flour to prevent them from sinking to the bottom while baking!

    Cream butter and sugar and then add egg and vanilla extract.

    Two: In a large bowl, cream the butter and sugar until light and fluffy.

    Three: Add the eggs one at a time and the vanilla extract, and mix until combined.

    Mix in the milk and stir in flour.

    Four: Mix in the milk until combined and then Stir in the flour with a spatula or wooden spoon until incorporated.

    Fold in the strawberries then transfer the batter to the loaf tin.

    Five: Fold in the strawberries and mix.

    Six: Transfer the batter to the prepared loaf tin and bake in the oven for 45-50 minutes. Allow to cool completely on a wire rack.

    To make the Strawberry Glaze

    Blitz strawberries in the food processor and then add the icing sugar.

    One: Place the strawberries into the food processor and beat until they become juice. Or just mash the strawberry with a fork to get a fresh strawberry puree, then press it through a fine mesh strainer to get the fresh juice.

    Two: Pour the strawberry into a small bowl, add the icing sugar and mix until a glaze forms.

    Three: Now, drizzle the strawberry glaze on top of the loaf cake and serve.

    Top Tips!

    • It's really annoying when loaf cakes stick to the surface of the tin after baking. It ruins the texture and appearance! To avoid this, you can either line your loaf tin with baking paper or use a silicon loaf pan.
    • Curiosity kills the cat? Nope. Curiosity ruins a perfect loaf cake! Stop opening the oven door from time to time to check how the loaf cake is doing. The heat will escape from the oven, which will cause your cake to sink and not rise evenly!
    • The cake has to be cooled completely before adding the glaze.
