I love how easy it is to make this recipe and it also has a superb taste and texture! The fresh strawberries are literally folded into the cake batter, so the fruity and pleasant aroma isn't as subtle as you'd expect it to be.

This is my go-to recipe to use up my garden's abundant strawberries in summer. It is simple, easy, comes together in a few steps and is ready in less than an hour! Perfect as a snack or dessert with a cup of coffee or tea.

Why I Love This Recipe
It's a quick and easy recipe to make. You don't have to worry whether you are an expert in the baking or are just about to start the fun ride of baking.
This simple recipe doesn't require any special equipment.
Ingredients
Self-rising Flour. Self-rising flour will no longer make you add a leavening agent like baking powder since it's already in there, making you're measuring a little bit easier.
Unsalted Butter. If you want your loaf cake light and fluffy, unsalted butter is the best choice for you!
Caster Sugar. I prefer to use caster sugar because it dissolves so easily in liquid, which means that it can create a smoother and better loaf cake batter for you!
Eggs. Eggs help bind all the ingredients you have in your cake batter, so consider them a must!
Vanilla Extract. Vanilla extract enhances the overall flavor of your cake.
Milk. It combines the dry ingredients, plus it makes sure that the loaf cake becomes moist and fluffy at the same time.
Fresh Strawberries. I used fresh, ripe but firm strawberries! The glaze and the loaf cake itself are filled with these delightfully fruity strawberries.
Pro Tip: If you use frozen strawberries thaw them first, and you also need to make sure they have been drained of excess water, or else the whole loaf cake will be soggy and unappealing.

How to make Strawberry Loaf Cake?
Make the Strawberry Cake
One: Preheat the oven to 180ºC / 350ºF and line a 2lb loaf tin with baking paper. Also, toss the chopped strawberry into 1-2 tablespoons of flour to prevent them from sinking to the bottom while baking!
Two: In a large bowl, cream the butter and sugar until light and fluffy.
Three: Add the eggs one at a time and the vanilla extract, and mix until combined.
Four: Mix in the milk until combined and then Stir in the flour with a spatula or wooden spoon until incorporated.
Five: Fold in the strawberries and mix.
Six: Transfer the batter to the prepared loaf tin and bake in the oven for 45-50 minutes. Allow to cool COMPLETELY on a wire rack.
Pro Tip: Stop opening the oven door from time to time to check how the loaf cake is doing. The heat will escape from the oven, which will cause your cake to sink and not rise evenly!
Make the Strawberry Glaze
Seven: Place the strawberries into the food processor and beat until they become juice. Or just mash the strawberry with a fork to get a fresh strawberry puree, then press it through a fine mesh strainer to get the fresh juice.
Eight: Pour the strawberry into a small bowl, add the icing sugar and mix until a glaze forms.
Pro Tip: You can adjust the consistency of your glaze to your liking. If it is too thick, add a few drops of water, if it's too thin, add 1-2 tablespoons of icing sugar.
Nine: Now, drizzle the strawberry glaze on top of the loaf cake and serve.
Variations & Substitutions
- Chocolates and strawberries? That sounds like a perfect combo. Mix in chocolate chip to the loaf cake batter to have a chocolatey flavor in this recipe!
- Replace milk with sour cream or plain yogurt! You can also replace butter with vegetable oil; however, the texture will be slightly different.
- You can top your fresh strawberry bread with cream cheese frosting, whipped cream Or just sprinkle some powdered sugar on top.
Serving suggestions
Since this strawberry bread is already drizzled with an equally delicious glaze, you no longer have to make any more toppings for it. You just need a perfect cup of coffee or tea to serve this delightful Strawberry Loaf Cake!
For me, I like to serve it with a cup of Oat Milk Hot Chocolate or Thyme Tea.
Storage
To store: This strawberry bread can stay at room temperature for a day or two in an airtight container. You can also refrigerate it for a week.
To freeze: This delicious cake can be frozen for up to three months while securely wrapped in plastic wrap and stored in an airtight container.
