    No Bake Strawberry Cheesecake Bars

    I always have Philadelphia cream cheese in my fridge, so I made these no-bake strawberry cheesecake bars for an easy dessert.

    These bars are SUPER rich and creamy; they are made with Philadelphia cream cheese, double cream and fresh strawberries.

    No Bake Strawberry Cheesecake Bars

    Like my No Bake Strawberry Cheesecake Recipe, this recipe has a creamy and tasty cheesecake filling that is bursting with a fresh strawberry flavour. It is also incredibly easy to make; just throw all the cheesecake filling ingredients in the blender and blend.

    I made the crust with only 2 ingredients: biscuit crumbs and melted butter. I didn't add any sugar because the filling and topping were perfectly sweet.

    The filling was super creamy; I made it with 3 main ingredients: thick double cream, which doesn't need any whipping, plain yoghurt and cream cheese. It was so creamy and tasty; I REALLY enjoyed this filling.

    I added fresh strawberries to the creamy filling to dye it pink and to give it an extra flavour, which was SO good!

    I also topped these bars with fresh strawberry slices and bluberries to make them lovely and cheerful.

    These Philadelphia cheesecake bars are my favourite Valentine's Day dessert, with their pink filling and red strawberry topping.

    Ingredients For Philadelphia Strawberry Cheesecake Bars

    For the crust

    • Biscuits: I used digestive biscuits, you can used any kind you like, you can also use cookies or graham cracker.
    • Butter: I prefer unsalted butter.

    For the cream cheese filling

    • Extra thick double cream: It doesn't need whipping.
    • Sugar
    • Cream cheese: I used Philadelphia cream cheese at room temperature.
    • Vanilla extract: For an extra flavor.
    • Plain yoghurt: You can use sour cream instead.
    • Fresh strawberries: I recommend using ripe strawberries because they tend to be extra sweet and juicy.
    • Toppings: Fresh strawberries and blueberries.

    How To Make No Bake Strawberry Cheesecake Bars

    Steps of making no bake strawberry cheesecake bars.

    One - Make the filling: In the blender bowl, whisk strawberries, yoghurt, and sugar (photo 1).

    Two - Add cream cheese and extra thick double cream and whisk again, put the mixture in the fridge until needed (photo 2).

    Three - Make the Crust: Put the biscuit in the food processor. Pulse until they become finely grounded. Add the melted butter and pulse until well combined.

    Four - Spread the crust mixture in a 9 inch pan. Press it into the bottom using your hands. Put in the fridge (photo 3).

    Five - Top the crust with the filling: Now, pour the cream cheese mixture over the prepared crust then refrigerate for 6 hours or overnight (photo 4).

    Six - Add the topping: Cut the strawberry cheesecake into small bars and then top the bars with chopped strawberries and blueberries. Serve!

    Top Tips!

    • To avoid any lumps in the filling, be sure that all the ingredients (especially the cream cheese) are at room temperature.
    • Refrigerate the bars for at least 6 hours to make sure they are set.
    • If you can't wait to refrigerate this delicious treat for 6 hours, then freeze it for just 1-2 hours.
    • Don’t use light or low-fat Philadelphia in this recipe; the cheesecake will not be as rich as expected.

    Serving Suggestions

    Serve these Philadelphia strawberry cheesecake bars after a delicious dinner such as Cajun Fried Shrimp, Oven Baked Sea Bass Fillets in Foil, Boom Boom Shrimp or 4 Cheese Mac And Cheese.

    Or just with a cup of Oat Milk Hot Chocolate, Sahlab or Korean Strawberry Milk.

    Is Extra thick double cream the same as double cream?

    No, Extra thick double cream is richer and denser than double cream, and it is spoonable.

    How to store these bars?

    Store in a sealed container in the fridge for 2-3 days.

    Can I make these bars ahead of time or freeze them?

    You can make these bars 2-3 days ahead of time. Freeze without the topping in a well-sealed container for 1-2 months.

    Ingredients

    Crust

    • 2 cups biscuit crumbs
    • 70 g unsalted butter , melted

    Filling

    • 500 g extra thick double cream
    • ¾ cup granulated sugar
    • 400 g Philadelphia cream cheese
    • ½ cup plain yoghurt
    • 400 g fresh strawberries

    Toppings

    • ¼ cup strawberries , chopped
    • ¼ cup blueberries

    Instructions

    • Put the biscuit in the food processor. Pulse until they become finely grounded. Add the melted butter and pulse until well combined. Spread the crust mixture in a 9 inch pan. Press it into the bottom using your hands. Put in the fridge.

    • In the blender bowl, whisk strawberries, yoghurt, and sugar. Next, add cream cheese and extra thick double cream and whisk again.

    • Now, pour the mixture over the prepared crust then refrigerate for 6 hours or overnight.
    • Cut the strawberry cheesecake into small bars then top the bars with chopped strawberries and blueberries. Serve! 
      ¼ cup blueberries, ¼ cup strawberries
