    Strawberry Cream Cheese Bars (No-Bake)

    No-bake strawberry cream cheese bars are the perfect treat for holidays, summertime, or any special occasion.

    It has a creamy and tasty cheesecake filling that is bursting with a fresh strawberry flavour. It is also super easy to make; just throw all the cheesecake filling ingredients in the blender and blend.

    Top it with some fresh fruits such as blueberries and strawberries to have a lovely and cheerful strawberry cheesecake bars.

    In fact, this no-bake strawberry cheesecake bar is one of my favourite valentine's day dessert; with its pink filling and red strawberries topping.

    Crust

    • Biscuit crumbs
    • Unsalted butter, melted

    Cheesecake

    • Extra thick double cream
    • Granulated sugar
    • Cream cheese
    • Plain yoghurt
    • Fresh strawberries

    Toppings

    • Fresh strawberries, chopped
    • Blueberries

    How to make Strawberry Cream Cheese Bars?

    Making the Crust: Put the biscuit in the food processor. Pulse until they become finely grounded. Add the melted butter and pulse until well combined.

    Spread the crust mixture in a 9 inch pan. Press it into the bottom using your hands. Put in the fridge.

    Making the Cheesecake: In the blender bowl, whisk strawberries, yoghurt, and sugar. Next, add cream cheese and extra thick double cream and whisk again.

    Now, pour the mixture over the prepared crust then refrigerate for 6 hours or overnight.

    Cut the strawberry cheesecake into small bars then top the bars with chopped strawberries and blueberries. Serve! 

    No Bake Strawberry Cream Cheese Bars

    Top Tips:

    To avoid any lumps in the filling, be sure that all the ingredients (especially the cream cheese) are at room temperature.

    Refrigerate the bars for at least 6 hours to make sure they are set.

    Use Oreo cookies in making the crust to have a lovely chocolaty crust, if you like.

    What if I can't wait that long to serve it?

    If you can't refrigerate these cheesecake bars for 6 hours, then freeze it for just 1-2 hours.

    • 500 g extra thick double cream
    • ¾ cup granulated sugar
    • 400 g cream cheese
    • ½ cup plain yoghurt
    • 400 g fresh strawberries

    • ¼ cup blueberries

      ¾ cup granulated sugar, 400 g cream cheese, ½ cup plain yoghurt, 400 g fresh strawberries, 500 g extra thick double cream
    • Now, pour the mixture over the prepared crust then refrigerate for 6 hours or overnight.
    • Cut the strawberry cheesecake into small bars then top the bars with chopped strawberries and blueberries. Serve!
