The Secret To Moist Banana Bread
- Use ripe bananas. They will provide a suitable amount of moisture to your bread.
- Don't overmix the batter. Overmixing will create a dense cake.
- Properly cream the butter and sugar. This will give the bread fluffiness and Prevent it from being dense.
- Use room temperature ingredients. This step will allow all the ingredients to mix together well.
Best Chocolate Chips To Use for Baking
You can use dark or semi-sweet chocolate chips since the loaf cake is sweet thanks to the overripe bananas along with the white sugar. However, if you like it extra sweet, you may use milk chocolate.
Success Tips!
- Use room temperature ingredients.
- Measure the flour correctly, because if you add more flour than the correct measurement, the bread will turn out dry.
- Don't overmix the batter after adding the flour, if you do so the bread won't rise well and will have a rubbery texture.
Variations and Substitutes
- If you like to add some crunchiness to the bread, you can toss in the batter some chopped nuts or raisins. For me, I love to add milk or dark chocolate chips. I find them enough.
- For extra banana flavor you can add a few drops of banana extract.
Add-Ins
- Nuts: chopped walnuts or pecan
- Veggies: Shredded zucchini or carrots.
- Fruits: Strawberry or Raspberry.
- Oats: These will provide a little more texture.
- Seeds: sunflower seeds or chia seeds.
- Dried fruit: Cranberries, apricots, sultanas or raisins.
- Cocoa powder
- Applesauce
- White chocolate chips
Serving Suggestions

Also, you can serve it with greek yogurt or topped with a spoon of Peanut butter, jam or Nutella.
Storage
To store: Keep leftovers in an airtight container or freezer bag in the fridge for 3-4 days.
To freeze: This bread freezes extremely well. Wrap the whole loaf in parchment paper or aluminum foil and keep it in the freezer for 1-2 months. Thaw overnight in the fridge.
You can also wrap the bread slices individually in plastic wrap and put them in a freezer when you need a slice or two; just leave it to defrost at room temperature for 30 minutes or so.
Recipe FAQS
If you don't have ripe bananas and you don't want to wait any longer to make this banana bread, you can put your bananas unpeeled in a baking sheet then bake in the oven at 180C for 15-20 minutes.
There are 2 methods to mash the bananas; the first method is to peel and slice the bananas, put in the food processor and blitz until puree. The second method is simply to use a fork to mash them. I prefer using the fork; it is much simpler.
