Oh my gosh, this incredibly easy garlic bread grilled cheese is the BEST grilled cheese I have ever tasted. A crusty garlic bread filled with ooey-gooey melted cheese and topped with garlic butter mixture, then toasted to perfection. I LOVE to serve it for lunch.

Garlic Bread Grilled Cheese
I love this sandwich, it is a staple in my house, a simple toasty sandwich that will be ready in less than 2 minutes and with basic ingredients. It is incredibly simple, quick and easy to make for breakfast or lunch.
When I choose bread for grilled cheese, I usually consider the bread's thickness and flavour. I use medium-thickness bread slices, and I like the plain white bread flavor. You may also use sourdough bread, Brioche or Baguette.
The cheese in this recipe is pretty simple, I used Mozzarella. But honestly you can use any kind of cheese that melts quickly, such as Cheddar, Gouda, Provolone, and Fontina. You can also use a combination of cheese such as a mixture of parmesan and mozzarella cheese.
I tested this recipe with most of these cheeses, and they all work fine with me.
Let's not forget the flavour of this sandwich comes from the garlic, herb, and butter; I actually used dried basil and parsley. However, I don't recommend using fresh herbs because they add a weird texture to the butter-garlic mixture.

Bread slices: I like to use medium-thickness bread slices because thin bread slices may crumble while cooking, and if I use too thick bread slices, the cheese won't melt, and the bread will get burned.
Note: Use gluten-free bread to make these sandwiches gluten-free.
Fresh garlic: To add the garlic flavor to the bread.
Butter: Must be softened.
Dried herbs: I used dried basil and parsley. You can use dried thyme instead of parsley.
Cheese: I LOVE Mozzarella cheese, especially in grilled cheese sandwiches. However, Monterey jack, sharp cheddar and Swiss cheese also work well. It is important to use good-quality cheese, though.
Note: Feel free to spice this sandwich with your favourite spices such as red chilli flakes, dried mint, basil, or any spices you like.
How To Make Garlic Bread Grilled Cheese?

One: In a small mixing bowl, mix softened butter with minced garlic, parsley, and basil.

Two: Spread a tablespoon of the butter mixture on one side of each bread slice.
Tip: Make sure to cover the entire bread surface with the garlic butter mixture. Don't forget the edges.

Three: Heat a large nonstick skillet on medium heat and place two of the bread slices on the skillet, the buttered side down.
Four: Next, top each bread slice with 2-3 slices of mozzarella cheese. Then top the mozzarella cheese with the rest of bread slices, the buttered side up.
Five: Cook for 1-2 minutes or until the bread becomes a golden-brown colour. Then carefully flip the sandwich on the other side and cook for 1-2 minutes more.
Tip: To help the cheese melt faster, you can cover the skillet with a lid or with a sheet of foil paper.
Six: Turn off the heat and cut the sandwiches into halves then serve immediately.
Expert tips!
- I recommend cooking this sandwich on medium to low heat to give the cheese time to melt well and to avoid burning the bread.
- This recipe makes two sandwiches. Feel free to scale it down for one sandwich or scale it up for more than two sandwiches.

Serving Suggestions
I like to serve it with some lettuce, tomato soup, or green salad.
You can also serve it with any sauce you prefer for dipping such as Cilantro Garlic Sauce, Bagel Dip, Haydari (Turkish Yogurt Dipping Sauce) or Mutabal.
Storage
To store: Wrap them in plastic wrap and keep in the fridge for 2-3 days.
To freeze: These sandwiches freeze so well. I use to make a big batch of these sandwiches and freeze them until needed.
To freeze these sandwiches, I recommend wrapping each sandwich in parchment paper then put in a well-sealed container in the freezer for two months.
To reheat: I simply put it in the microwave straight from the freezer for 1 minute or in the oven for 10 minutes.
Recipe FAQs
Well, that totally depends on how you like your sandwich to taste. If you like it to have a strong garlic flavour you may need to use fresh garlic; however, you can use garlic powder if you like it to have a mild garlic flavour.
Yes, you definitely can. Bake them in the oven at 190C / 380F for 5-6 minutes or until becoming golden brown.
