Coronation Chicken Sandwich is a classic British sandwich made with the famous flavorsome coronation chicken filling placed between two bread slices. Today, I will share how to make this AWESOME sandwich!

Coronation Chicken Sandwich
When I need an easy and flavorful sandwich for lunch, I always make a Coronation Chicken Sandwich. This is also a great way to use leftover pre-cooked chicken if I have some in the fridge.
So, what’s so special about this filling, you may ask? Well, the juicy chicken is tossed in a delectable sauce made with mango chutney, curry powder, lemon juice, and some good old mayonnaise. YUM!
Here are some notes I like to share with you about this recipe:
Mango chutney is absolutely Delicious; It really elevates the sandwich to the next level. I love It's sweet, tangy and spicy taste. In this recipe, I use only 2 tablespoons of mango chutney. However, I highly recommend using it.
I like my coronation sauce to be a little thick so when I eat the sandwich, nothing drips from it. If you like it a bit saucy, I recommend adding ½ cup more mayonnaise.
Moreover, with bits of dried apricots and coriander enriching the sauce even further, this chicken deserves nothing short of a ceremony! So without further ado, let’s get into the full recipe.
Ingredients

Coronation Chicken Filling
- Chicken breast: I use chicken breast. Although this recipe is traditionally made with chicken breasts, you can use any boneless, skinless chicken you have in the freezer.
- Bay leaves: I use 2 dried bay leaves when cooking the chicken.
- Lettuce leaves: For that crunch in your sandwich.
- Bread slices: Any that you like, you can use gluten-free bread, white bread, baguette or sourdough.
Pro Tip: If you prefer crisp sandwiches, you can toast your bread slightly before filling your sandwiches.
Coronation Sauce
- Lime juice: I recommend freshly squeezed lemon.
- Mayonnaise: Just what you probably have at home.
- Curry powder: I use milk curry powder, you can find it at any Indian grocery store.
- Mango chutney: It adds a delicious sweet and tangy flavor to the sauce.
- Dried apricots: It gives the sandwich an extra delicious fruity flavor.
- Coriander: Of course, fresh.
How To Make The Recipe
Before assembling the sandwich, ensure you get all the ingredients ready on your kitchen counter.
First Step - Prepare the chicken

Now, the first thing we want to do is get the chicken ready. Bring the water to a boil in a large pot, and then add the chicken and bay leaves.
Then, cook for 10 to 12 minutes or until the chicken is fully cooked. Then, take the chicken out of the pot, drain it, and cut it into small pieces.
Cut the pieces to the size you’d prefer the chunks to be in your sandwich. Set these chicken pieces aside for later (photo 1 & 2).
Second Step - Make the Coronation Sauce

Next, we’ll be making the coronation sauce. Take a large bowl. We will be adding the chicken pieces to this bowl eventually, so make sure it’s big enough to store the entire chicken filling.
Mix the mango chutney, mayonnaise, dried apricots, lemon juice, coriander, and curry powder in this large bowl. Mix all these ingredients well together. This is our coronation sauce (photo 3 & 4).
Third Step - Assemble the sandwich

Now, take the chicken pieces we had set aside earlier and toss them in this coronation sauce until they are well coated (photo 5 & 6).

Finally, spread the chicken filling on a slice of bread, top with lettuce, and then with another piece of bread. Slice the sandwich in half, and that’s it (photo 7).
Your sandwiches are ready to be served!

Expert Tips!
- If you don’t want to use too much mayonnaise. In this case, I recommend putting part yoghurt and part mayonnaise into the coronation sauce to give it the same consistency.
- If mango chutney is unavailable, you can substitute it with apricot jam or other fruit chutneys.
- To store: Just seal it in a nice air-tight container and plop it in the fridge, where it will last a good 2 days or freeze for up to 2 months.
Serve It With
A nourishing supper? Yes, please. Pair this sandwich with Beetroot and Goats Cheese Salad, Classic Taco Salad or Smoked Salmon Pasta Salad, and you’ve got an easy and satisfying dinner.
Serve it Indian style! Skip the bread slices for this one. It’s safe to place coronation chicken beside some vegetable rice such as Cajun Rice Dressing, Veggie Egg Fried Rice or Mushroom Fried Rice and treat it like a curry.

Notes
