    Beet And Goat Cheese Salad

    This Beetroot and Goats Cheese Salad recipe is an incredibly simple meal or side dish. It is loaded with vegetables, has a crunchy texture thanks to toasted walnuts, and is topped with a sweet, tangy dressing made with honey mustard.

    Beet And Goat Cheese Salad

    This AMAZING salad comes together in under ten minutes following simple instructions. Hence, I usually serve it for a quick meal or include it in my dinner menu as a side dish to any meat dishes I plan to have on the table.

    This dish is flavourful and has the crunchiness, freshness and pleasing color that we all love in any salad. I LOVE to serve it with Oven Baked Chicken Thighs, Crispy Chicken Patties or Roasted Green Beans and Carrots.

    I tried to make this salad as simple as possible, so I used a ready-cooked beetroot from the store; before, I used to buy uncooked beet, wash, peel and boil it until tender, then slice it, which was too much work for me. 

    If you are okay with this, I highly recommend wearing gloves when peeling and chopping the beetroot; otherwise, your hands will be stained.

    I also tossed the walnuts myself because I didn't find pre-roasted walnuts in the store. Friends, adding goat cheese to this salad is SUPER important; I highly recommend not skipping it. 

    The salad dressing is SO good; rich with honey and mustard flavors; It has a sharp, tangy and sweet flavour.

    What You’ll Need

    Ingredients of the beetroot and goats cheese salad.

    Rocket. I use the rockets for their spicy, peppery, mustard-like flavour. If you love rockets, check out my Rocket Salad Recipe.

    Lettuce. It will give that satisfying crunch to this salad!

    Cooked Beetroot. Cooked beetroot has a delicious earthy sweetness that will go well with the other ingredients in this recipe. You can use uncooked beetroot. However, you will need to grate it if you are including it without pre-cooking it.

    Soft Goats Cheese. It will give your salad a delicate, creamy and buttery texture. You can use feta cheese or blue cheese instead.

    Walnuts. For some crunchiness; just make sure that they are well-toasted before including them in your salad recipe.

    Cherry Tomatoes. I used them for their sweet taste and lovely colors.

    Raisins. Raisins add some fruity flavour and sweetness to this salad.

    For The Salad Dressing: I used Dijon mustard, cider vinegar, honey, extra virgin olive oil, salt and pepper.

    How to Make Beetroot and Goats Cheese Salad - Step By Step

    One: Toast the walnuts in a large skillet until golden brown.

    Two: To make the dressing, in a small bowl, mix all the dressing ingredients until combined.

    Three: In a serving bowl, add the lettuce, rocket, beetroot, tomatoes, walnuts, raisins and the goats cheese. Drizzle with the dressing and serve!

    Top Tips!

    • Make sure that you do not drizzle your salad with the salad dressing too early. Drizzle the salad dressing when you are already about to serve it so that the lettuce and rocket will not wilt.
    • The most basic tip in making this salad is to use the freshest ingredients you can find especially the goats cheese for a better flavor and texture.

    Substitutions & Variations

    • For more green veggies and crunch, add spinach and celery.
    • You may use any nuts you prefer, such as almond, pecan or cashew. You can also use seeds such as pumpkin seeds or sunflower seeds.
    • Replace cider vinegar with lemon juice if you like.
    • Add any leftover cooked chicken you have to this salad to give it a little protein boost.

    Serving Suggestions

    Serve this Beetroot Goats Cheese Salad as a side dish for Lamb Moussaka or Cajun Fried Shrimp.

    I alway serve it with Roasted Lemon Rosemary Chicken with Potatoes, or Baked Parmesan Crusted Cod.

    Ingredients

    • 100 g walnuts
    • 60 g rocket , roughly chopped
    • 60 g lettuce , roughly chopped
    • 250 g cooked Beetroot , sliced
    • 100 g soft Goats Cheese , crumbled
    • 100 g cherry Tomatoes , cut into halves
    • ⅓ cup raisins

    For the dressing

    • 1 tablespoon dijon Mustard
    • 1 ½ tablespoon honey
    • 1 tablespoon cider Vinegar
    • 1 ½ tablespoon extra Virgin Olive Oil
    • ½ teaspoon sea Salt
    • ¼ teaspoon pepper

    Instructions

    • Toast the walnuts in a large skillet until golden brown.
      100 g walnuts

    To make the dressing

    • In a small bowl, mix all the dressing ingredients until combined.
      1 tablespoon dijon Mustard, 1 ½ tablespoon honey, 1 tablespoon cider Vinegar, 1 ½ tablespoon extra Virgin Olive Oil, ½ teaspoon sea Salt, ¼ teaspoon pepper
    • In a serving bowl, add the lettuce, rocket, beetroot, tomatoes, walnuts, raisins and the got cheese.
      60 g rocket, 60 g lettuce, 250 g cooked Beetroot, 100 g soft Goats Cheese, 100 g cherry Tomatoes, ⅓ cup raisins
    • Drizzle with the dressing and serve!
