    Tomato And Onion Salad

My Italian salad is super basic and simple, but it is SO flavorful; The tomatoes are juicy, the onion is crunchy, and the dressing, which is made with olive oil, balsamic vinegar, garlic and oregano, is AMAZING.

And all it takes to make this salad is to mix all the ingredients in a salad bowl, and voila, you have made a delicious side dish to serve with chicken, pasta or any dish you like.

I highly recommend mixing the tomatoes and onion with the dressing just before serving. This is because the tomatoes, especially the onions, can get soggy if they're made too far ahead.

You can smother it over some bruschetta's, use it as taco stuffing or alongside your favourite main course.

    Ingredients

Note: This is an overview of the ingredients. See the recipe card for full information on ingredients and quantities.

    • Tomatoes: I prefer to use the juiciest ones I can find. When I shop for tomatoes, I pick the ripe and plump ones. However, they should still feel tight to the hand and not mushy. You may also use cherry tomatoes instead.
    • Red onion: For added crunchiness. If you don't like raw onion, just replace it with bell pepper.
    • Garlic: Just a few cloves.
    • Olive oil: The extra virgin kind is the one I like the most.
    • Balsamic vinegar: You can use apple cider vinegar instead.
    • Kosher salt: Or any salt you have on hand.
    • Dried oregano:

    Step By Step Instructions

Steps of making the recipe by photos

Before you begin making this salad, it's a good idea to take out all the ingredients and prep them.

One: wash and chop the tomatoes and onions to the desired size (I prefer wedge-shaped slices) and finely dice the garlic so it is barely noticeable in the salad.

Tip: If you use this salad on bruschettas or tacos, I recommend dicing the onion and tomato for the best results.

Two: Once all the fresh ingredients are washed and chopped, you can add them to a mixing bowl.

Three: Now add the dressing in the same bowl, I mean balsamic vinegar, olive oil, and dried oregano. Finally, add a little Kosher salt as per your liking.

Four: Toss all the ingredients in the mixing bowl until all the flavors are well-mingled among each other.

Bravo! You're done preparing the healthiest multipurpose salad. And wasn't it super easy too?

    Variations

    • Fresh herbs: Add fresh dill, parsley or basil. Just chop up any of the herbs and use them to garnish your salad. It adds color and flavor.
    • Feta Cheese: A little goes a long way.
    • Olives: Slice these into small rings, and you'll love these sour delights in every bite.
    • Colourful Tomatoes: You can add a vast palette of colours to this recipe by including green tomatoes, yellow tomatoes or orange tomatoes.

    Serving Suggestions

I like to used in sandwiches or Tacos alongside my favourite form of protein or sauces.

It looks great on the dinner table, served alongside right about any savoury dish of your choice. Whether it's Marmite Pasta, Boom Boom Shrimp, Moussaka or Deep Fried Chicken Thighs.

    Storage

You can store this salad for a couple of hours in the fridge. Although I would like to mention that refrigerating for a prolonged period can dull the tomatoes' flavor.

Just take the salad out of the fridge just a couple of hours before it is served. This will allow the salad to sit at room temperature and regain all the flavors that the tongue can skip if the salad is too cold.

    Can I Add Some Greens?

Yes, of course! In fact, cucumbers and bell peppers are a pretty popular addition to this Italian salad. You can also add your favourite leaves such as spinach, rockets or lettuce.

Fresh and delicious. However, I added some green leaves to it.

I added more salt and replaced the oregano with basil.
