Have you ever tried Greek yogurt mac and cheese? It is AMAZING! A healthy, protein-packed dish that is super creamy and easy to make.
I LOVE IT because it is a better version of the typical mac and cheese; I made it with Greek yogurt, and I found it tastier.
Greek Yogurt Mac and Cheese
This quick and easy mac and cheese recipe is SUPER light, creamy and delicious. I LOVE that it is a one-pot meal, requires only a few ingredients and is perfect for lunch, dinner or as a side dish.
It has the oh-so flavor of cheddar cheese and the incredibly creamy texture of Greek yogurt.
I usually serve it with sweet and sour salmon, steak with butter or baked chicken. You may also serve this dish with a green salad.
You'll Need
Dry Elbow Pasta. I noted that the elbow pasta seemed to hold the cheese sauce better than any of the other pasta. So, I always use it when making mac & cheese.
Cheddar Cheese. I like to use mature cheddar cheese for a delicious flavor.
All purpose flour. I use it to make the roux.
Butter. I add 1 part butter to 1 part flour to make the roux.
Milk. I use whole milk to make the best macaroni and cheese sauce.
Greek Yogurt. I use plain Greek yogurt.
Seasonings: I keep it simple and use only salt and black pepper.

How to Make The Best Greek Yogurt Macaroni and Cheese
One: In a medium saucepan or pot, cook the dry pasta according to the package directions until al dente, drain well and set aside.
Tip: You need to achieve the correct pasta texture, so don't overcook or undercook your pasta. Also, cook the pasta in salted boiling water.
Two: In a pot, melt the butter over medium heat, add the flour and whisk constantly for about 30 seconds.
Three: Now, stir in the milk and whisk for 1-2 minutes until it thickens.
Four: Add the greek yogurt, then add the cheese and stir until it melts (about 3 more minutes).
Five: Once the greek yogurt cheese sauce is thickened, stir in the cooked pasta and mix to combine.
Six: Add salt and pepper to taste, then serve immediately.
Can I Freezer Mac & Cheese In The Freezer?
Yes, you can. I let the macaroni cool completely before putting it in an airtight container and freezing it.
I keep it in the freezer for up to 3 months.
