Cheesy chicken fajita is a healthy and easy make chicken recipe. It is a full meal; you don’t need anything with it. Therefore, I add the zucchini to this recipe; to make the recipe more nutritious. Also, you will not taste the zucchini in the recipe because I use it shredded. If you need an extra thing to serve with the chicken fajita, you can serve it with Tortillas.

  • Different coloured Peppers
  • Onion sliced
  • Chopped tomatoes
  • Zucchini shredded
  • Cheddar cheese
  • Mozzarella cheese

How to make the cheesy chicken fajita:

  • Firstly, start by cutting the chicken breasts into small slices.
  • Then, slice the peppers and onion,
  • After that, put some olive oil in skillet or pot.
  • Then, add the onion and the pepper and stir until tender.
  • After that, add the shredded zucchini and stir.
  • Then, add the chicken and all the spices and stir.
  • Add the tomato and some water if needed.
  • Leave it to simmer for about 20 minutes.
  • Add half of the cheese and remove from the fire.
  • Then, serve hot and add the rest of the cheese on the top of the chicken.
  • Garnish with some fresh parsley (optional).

Tips:

I have made the cheesy chicken fajita more than once using a different kind of spices. I have used Italian seasoning and Chinese 5 species, both were delicious, but I prefer the taste of the Chinese 5 species more.
