    This easy chicken fajitas with vegetables recipe is healthy and easy to make. It is loaded with vegetables, cheese and chicken breasts with flavourful Fajitas spices

    Chicken Fajitas With Vegetables in a plate

    It is a full meal; you don't need anything with it. Therefore, I add the zucchini to this recipe; to make the recipe more nutritious. Also, you will not taste the zucchini in the recipe because I use it shredded. If you need an extra thing to serve with the chicken fajita, you can serve it with Tortillas.

    The secret of the delicious taste of this chicken recipe is the spices I add in it and the extra cheese.

    Ingredients Chicken Fajitas With Vegetables

    The following ingredients are necessary for making This chicken recipe.

    • Chicken breasts
    • Different coloured Bell Peppers
    • Onion sliced
    • Chopped tomatoes
    • Zucchini shredded
    • Cheddar cheese
    • Mozzarella cheese

    Spices:

    • Salt
    • Dry basil
    • black pepper
    • Chilli powder
    • Chinese 5 spices

    How to Make Chicken Fajitas With Vegetables?

    How to make the recipe
    • Firstly, start by cutting the chicken breasts into small slices.
    • Then, slice the peppers and onion,
    • Put some olive oil in skillet or pot.
    • Add the onion and the pepper and stir until tender.
    • After that, add the shredded zucchini and stir.
    • Add the chicken and all the spices and stir.
    • Add the tomato and some water if needed.
    • Leave it to simmer for about 20 minutes.
    • Add half of the cheese and remove from the fire.
    • Garnish with some fresh parsley (optional).
    • Then, serve hot and add the rest of the cheese on the top of the chicken.

    Top Tips!

    • I have made the cheesy chicken fajita more than once using a different kind of spices. I have used Italian seasoning and Chinese 5 species, both were delicious, but I prefer the taste of the Chinese 5 species more.
    • If you don't like to add Zucchini, you can replace it with any other veggies, such as spinach.
    • You may add some mushrooms to this dish by sauteing the mushrooms with the veggies.
    • If you don't like it spicy, skip the chilli powder or replace it with some paprika.

    Zucchini, jalapenos, tomatoes, bell pepper, spinach, shredded cabbage, coriander, parsley and green beans.

    Serving Suggestions

    • You can serve it as a stand-alone dish or serve it with a green salad or tortilla bread.
    • You can also Put ½ cup of the Chicken Fajitas With Vegetables on top of the tortilla, add some cheese, wrap it well and put in the microwave for 10 seconds until the cheese melt.
    • Serve it on top of rice or white pasta.
