I made this Mediterranean Chicken kofta with ground chicken, parsley, onion, and garlic. I also perfectly seasoned it with salt, pepper, paprika, and red pepper flakes.
Chicken kofta is my go-to recipe when I want something comforting and delicious.

Chicken Kofta
I’ve learned a few tricks that ensure my kofta turns out juicy and delicious:
First, I like to add some butter to the ground chicken, which keeps the kofta moist.
Second, adding the soaked bread is so important; it absorbs all the juices while cooking.
I also prefer to cook the kofta on medium heat to ensure they are fully cooked from inside and outside.

What's in this chicken kofta?
- Ground chicken, eggs and bread crumbs.
- Herbs: fresh mint and parsley.
- Seasonings: ground pepper, salt, paprika, cumin, red pepper flakes.
- Onion and garlic: This recipe calls for minced garlic and grated onion.
- Olive oil: to make everything come together.
- Tomato sauce: I use it to give the kofta a lovely colour and taste. (optional)

How To Make Chicken Kofta

- In a mixing bowl, add the ground chicken, butter, parsley, salt, pepper, cumin, red pepper flakes, ½ teaspoon of paprika, onion, garlic, mint, bread crumbs, egg and olive oil.
- Using your hand, mix well until combined.
- Wet your hand with water, then form the chicken mixture into balls.
- Arrange the kofta balls on a plate, then brush them with a mixture of tomato sauce and ½ teaspoon of paprika.
- Spray the grill with oil and heat to medium.
- Place the kofta balls on the grill and cook for 5-6 minutes on each side or until fully cooked.
- Serve immediately.
Pro Tips
- Brushing the kofta with the mixture of tomato sauce and paprika is optional. However, I suggest doing it because it gives the chicken an excellent dark red colour and a pleasant taste as well.
- When you form the chicken mixture into balls, it is important to wet your hands with a little bit of water because the mixture is sticky and it will be so messy if you didn't wet your hand. So don't skip that.
- You can use skewers in forming your kofta.
- Don't forget to grease the grill with oil; you don't want the kofta to stick to the grill.
