Cornflake Chicken Nuggets
Since my kids LOVE McDonald's chicken nuggets so much, I decided to make a healthier version. My crispy baked cornflake chicken nuggets are incredibly crispy, easy to make baked and not fried!
I sometimes make them ahead of time and freeze them for a quick and easy weekday dinner. Or you can put them in your kids' lunch boxes.
The first time I made these chicken nuggets, my young daughter told me, “Mom, these nuggets are better than what you buy from McDonalds.” I was SUPER happy about that!
I usually serve them with ketchup or mayo for snack or with garlic parmesan baked potatoes for lunch.
Ingredients
Chicken: I used chicken breasts cut into small pieces. Try to cut them into the same-size pieces so they cook equally. I also tested this ripe with chicken thighs, and it was not as good; I actually prefer the texture of the chicken breast.
Breading: I used cornflake crumbs, cornmeal, and breadcrumbs.
Tip: I crunch the cornflakes in the food processor. However, you put them in a ziplock bag and smash them with a rolling pin. For a crunchy texture, don't finely crush the cornflakes.
Seasonings: Salt, pepper, sweet paprika, and garlic powder. I sometimes use smoked Paprika.
Note: If you like them spicy, add a pinch of red pepper flakes.
Other ingredients: Eggs and milk.
How To Make Baked Cornflake Chicken Nuggets?
Preparations: Preheat the oven to 190c / 360f. Line a baking sheet with parchment paper.
Prepare the chicken: Pat your chicken dry with a kitchen towel and cut them into bite-size pieces.
Tip: The secret for crispy chicken nuggets is to Pat the chicken dry with a paper towel before dipping them in the egg.
Breading: On a plate, mix cornflake crumbs, cornmeal, bread crumbs, paprika, garlic powder, salt, and ground black pepper. In a small bowl, mix the beaten eggs and milk. Pour the egg mixture over the chicken breast pieces, mix well, then dip each piece into the crumbs mixture.
Tip: Make sure to coat the chicken pieces well with the crumbs mixture.
Baking: Arrange the nuggets onto the baking sheet and bake for 20-25 minutes or until they’re golden brown.
